In September of 2022, I put out a “Capsule Meal Plan” in which I made multiple recipes from a “capsule” of about 20 ingredients. The idea was to save time and money by simplifying what we needed to keep on hand, but still have a variety of meals. I challenged myself to create breakfast, lunch, snack, dinner, and even dessert recipes using just those 20ish ingredients and a few pantry seasoning staples. Several months later, I revisited this particular capsule meal plan and challenged myself to come up with a few more recipes that could be made with only those ingredients as options.
This SUPER EASY Spicy Beef and Green Bean skillet meal was one of the results, and I could not have been more pleased! It checks a lot of boxes for me: easy, quick, one-pan, few ingredients, tasty, and even versatile (because you can serve it with lots of different starches like rice, noodles, or even cauliflower rice).
